I shivered as I pulled my hooded jacket out of the closet and slipped it over my tank top.

“Man, when did it get so chilly?”

Here in Texas, fall comes in suddenly.  Usually it starts one day in October when the seasons change from summer to winter overnight.  After a few days, it seems to settle in to the new season, kind of like when you get a new haircut and it’s in shock for the first few washes.

Without fail, that sudden drop in the mercury has me reaching into the pantry in hopes of finding some long-forgotten can of pumpkin.

What is it about pumpkin that just screams fall?

Mix it together with some cinnamon and ginger, and you’ve got every basic girl’s favorite fall flavor combo.

When the craving strikes, ain’t nobody got time for a legit pumpkin pie.

No, only the simplest, quickest recipes will do.

Dump cake. . .such an unappealing word for such a deliciously easy recipe.

This dump cake is more like a cobbler, almost a pumpkin pie in a cake.

Simply mix up the wet ingredients.

Dump on a cake mix.

Dump on some butter and nuts.

Call it good!

2 Ingredient Pumpkin Bread

Ok, y’all.  Any recipe that calls for only 2 ingredients is a winner in my book.

Turns out, cake mix and canned pumpkin have some sort of magic marriage where they create tons of delicious babies.

(Wait, that sounds wrong.)

I don’t claim to understand the wizardry, but the two together make miracles.

One box of spice cake and one simple can of pumpkin puree will combine to form a loaf that’s tasty enough to take to Aunt Martha’s potluck.

Or to scarf down for breakfast, lunch, and dessert.

Okay, okay, if you don’t want to use the boxed cake mix and you’d rather have something that’s a little better for you, don’t miss these healthy pumpkin cookies.

He says they’re 3 ingredients, but they’re really better if you use a few more (the ingredients are listed in his recipe).

Pumpkin Baked Oatmeal

When I’m craving my fall fix in the morning, I whip up some pumpkin baked oatmeal.

This is one of those “no recipe” recipes that you can get away with if you just mix oats, pumpkin, eggs, a bit of milk and some spices.  Then bake till it’s done.

I am often mixing up and baking without really measuring.

But, for those of you who prefer to do things the right and proper way with guaranteed results (I’m looking at you, Lisa), then this is a great basic recipe to go with.
