I started planning my daughter’s 11th birthday party even before she was born.  I was introduced to the wonderful wizarding world in 2000 and was well past my own 11th birthday…with no letter from Hogwarts.

I knew her 11th birthday would be the year we would go all out and create all our favorites from the Harry Potter world!  Pumpkin Pasties for your Harry Potter party. What I didn’t know then was that we would also have a 6 week old colicky baby at the time.   As much as my little fangirl heart wanted to go BIG on our Potter party, my sleep-deprived mama brain asked, “how can we do this the easiest way possible?”

We had flying Hogwarts letters, a run through Platform 9 3/4, Moaning Myrtle and the Heir of Slytherin in the bathroom, and custom wands for all the guests!  But I took the easy way out with these pumpkin pasties, and I couldn’t be happier!

They are so simple to bake, you will have no trouble adding them to the mix with your Potter Extravaganza, no matter how many other projects you want to accomplish.

Without further ado,

The Easiest Pumpkin Pasties Recipe

For the Filling:

Bust open a 15 oz can can of pumpkin. This is what I use.   Not pumpkin pie filling, just plain 100% pumpkin.

Dump the pumpkin in a bowl.  Add one egg, 1/2 cup of brown sugar, 1 teaspoon of cinnamon, 1/2 tsp ginger, 1 tsp of vanilla, and a pinch of salt. Stir to combine.

Here’s the shortcut.

Canned biscuits!

I use the Grands kind and they are big enough that you can break them in half and get two pasties from one biscuit.

Open the can, pull the biscuits apart and tear them each in half.  Then gently shape the halve into balls.  You don’t want to over work the dough.

Roll them out till very thin.

Dollop on about a Tablespoon of your filling.  Really, you want as much as your pocket can hold without busting out.  Oozy pasties are icky!

Fold over and seal the seams with a fork.  Easy peasy.

Place them on a parchment or silicone lined baking pan and sprinkle with a teensy bit of cinnamon.

Bake at 375 for about 12-15 minutes.

When they reach the intersection of Golden Brown and Delicious, they’re ready to go!

I could eat these little dudes all day long.   They’re not too sweet, just right for a snack, or breakfast, or dessert, or… okay, maybe I shouldn’t eat them for lunch.

The dough is slightly chewy which gives them a satisfying bite.

If you prefer a flakey crust, I have also baked these with store-bought refrigerated pie crust and they turn out great too!  I just prefer the biscuit recipe.

Listen, I’m the kind of woman who bakes biscuits, pie crusts, even cream puffs from scratch, but I also know when it’s acceptable to get a little help from the grocery store.  When you’re putting together a magical feast of this magnitude, done is better than perfect!

  1. What about when we don’t have canned biscuits available for purchase? I live overseas and they don’t make canned biscuits. Thanks.

    1. What a bummer, Mandy! You can use pie pastry. Do they have pre-made pie pastry?? Any homemade biscuit recipe would probably work as well. I haven’t experimented with puff pastry, but that could be another option.

  2. I can’t wait to make these! We are doing the same thing for my 11 Year Old Boy’s Birthday party next weekend. These will make a perfect addition. I’m going to keep an eye out for your other recipes too 🙂

    1. Hi Jade, great question! I love them either way. Usually a little warm is best. If you wanted to bake them early for a party you could pop them back in a 200-250 degree oven for a few minutes to warm them just a tad. Enjoy!

    1. Hi Jazmine! I used one can of biscuits which has 8 large biscuits and makes 16 pumpkin pasties. There was plenty of leftover filling though. I think you could easily get 32 if you purchase 2 cans of the large biscuits.
